Tasting Notes
In the glass, this Spätburgunder shows a translucent ruby to garnet hue, with a bright, limpid core that reflects its delicate extraction. The nose is refined and focused: wild red cherries, raspberry and pomegranate are woven with rose petals, dried herbs, and a subtle hint of cranberry, layered over fine notes of crushed stone, graphite, and a touch of sweet spice from careful barrel aging. On the palate, the wine is taut, precise and beautifully balanced, with a cool-climate freshness that immediately stands out. Sleek red fruit—sour cherry, red currant and a hint of red plum—is supported by vibrant acidity and finely grained, chalky tannins. There’s a mineral edge that runs through the mid-palate, lending tension and length, while discreet notes of clove, cedar and smoke from small oak barrels add complexity without overshadowing the fruit. The finish is long, linear and saline, suggesting very good aging potential: it will drink well upon release but should continue to gain nuance and harmony over the next 6–10 years, depending on storage.
Production
Kallstadter Steinacker is a classified Erste Lage site, characterized by cool exposures, elevated parcels and limestone-rich soils with loam and calcareous marl—conditions that are ideal for producing finely structured Spätburgunder with natural freshness. Weingut Rings farms the vineyard organically, focusing on low yields, hand work in the vines and selective hand-harvesting to ensure only fully ripe, healthy grapes are brought to the cellar. After gentle destemming, fermentation typically proceeds with native yeasts in small open fermenters, often including a proportion of whole clusters to build structure and aromatic lift. The wine is then matured in small oak barrels (barriques and/or Stückfass), mostly used or lightly toasted, for well over a year, allowing it to develop complexity and texture while preserving purity, tension and transparency to the site.

This elegant, structured Spätburgunder is a versatile partner at the table, pairing beautifully with roast poultry (duck or guinea fowl), veal, pork tenderloin, or dishes featuring wild mushrooms and root vegetables. It also excels alongside lighter game birds, charcuterie, and semi-hard cheeses such as Comté or aged Gouda. Serve at 14–16°C to highlight its aromatic detail and fresh acidity; avoid serving too warm, which can blur its fine structure. A gentle decant of 30–60 minutes is recommended in its youth to let the wine open up and release its more subtle floral and mineral notes, while more mature bottles can simply be poured carefully from the bottle to preserve delicate aromas.
