Tasting Notes
In the glass, the 19/20/21 Brut Nature Bio shows a bright, pale straw hue with subtle golden reflections and a very fine, persistent mousse. The nose is immediately inviting, with ripe orchard fruits—baked apple, pear and quince—layered over hints of dried stone fruit and a delicate, slightly oxidative note that adds complexity rather than heaviness. Underneath lie stony mineral tones, fresh bread dough, fine lees, and a gentle nuttiness. On the palate, the wine is bone dry yet full of flavor, with a beautiful tension between ripe fruit and a vibrant acid line. Flavors of dried apricot, yellow apple, citrus zest and a touch of brioche are woven together with chalky, slightly smoky minerality and subtle hazelnut. The mousse is exceptionally fine and creamy, giving the wine both elegance and drinkability, while the finish is long, darkly spicy and saline, with real energy and grip. Enjoy it now for its vibrancy, or cellar it for 3–5 years to allow the oxidative and autolytic (yeasty) nuances to gain further depth.
Production
The Chardonnay and Spätburgunder grapes for this cuvée come from organically farmed vineyards in the Pfalz, including parcels within and around the protected nature reserve Kleine Kalmit, a site known for its limestone-rich soils and diverse flora. This living, calcareous terroir lends both structure and a distinct mineral edge to the wine. Harvesting is done by hand to ensure only perfectly healthy, ripe grapes are selected. In the cellar, the philosophy is radical minimalism: the base wines from the 2019, 2020 and 2021 vintages are fermented with native yeasts and handled gently, without fining or unnecessary interventions. The second fermentation takes place in the bottle in the traditional method, using only the grapes’ own natural resources rather than added sugar, and the wine is bottled as Brut Nature with no dosage, preserving absolute purity and a transparent expression of place and vintage blend.
Food & Serving
This Brut Nature is a superb, gastronomic sparkling wine that pairs beautifully with subtly prepared dishes that highlight texture and umami. Think oysters and other raw or lightly marinated shellfish, sashimi and crudo, tartare of sea bass or tuna, or simply grilled fish with lemon and herbs. Its nutty, leesy complexity also works well with soft goat’s cheese, creamy cow’s milk cheeses, charcuterie, roasted poultry, or vegetable-driven dishes such as risotto with mushrooms, roasted root vegetables or cauliflower steak. Serve well chilled at 8–10°C. A short decant of 10–15 minutes in a wide sparkling wine glass (or a white wine glass rather than a flute) helps the wine open, letting the oxidative and yeasty nuances unfold and the mousse relax slightly.
