The Chardonnay Réserve Bio is sourced from the Steinacker site near Nieder‑Hilbersheim, one of Weingut Knewitz’s coolest and most distinctive vineyards. Grapes are farmed organically and hand‑harvested at optimal ripeness to preserve acidity and purity of fruit. In the cellar, the must is gently pressed and fermented in barrique, with careful use of mostly used (and a portion of new) French oak to frame, rather than mask, the fruit. Extended maturation on the lees adds texture and complexity, while batonnage is applied judiciously to maintain the wine’s precision and mineral drive.
