Tasting Notes
In the glass, the 2022 Pergentsknopp GG shows a pale, crystalline straw color with greenish reflections, foreshadowing its youthful energy and precision. The nose is initially reserved and tightly coiled, gradually revealing notes of lemon zest, lime peel, crushed slate, green apple and white grapefruit, with hints of white flowers, smoke and cool herbs as it opens. It is more restrained and compact than the standard Scharzhofberger bottling, emphasizing mineral depth over immediate opulence. On the palate, the wine is ultra‑sleek and finely etched, with a firm, almost chiselled structure. A core of bright, pure citrus—lemon, lime and a touch of pomelo—drives across the palate like an arrow, supported by crunchy green apple and a powerful, salty slate minerality. The wine is knastør (bone dry), with racy yet beautifully integrated acidity that stretches the finish into a long, lingering line of lemon, smoke and stone. This is a Riesling built for the long haul: while already thrilling in its precision, it will gain complexity, texture and aromatic breadth over 10–20 years in the cellar, and likely beyond under good conditions.
Production
The Pergentsknopp GG comes from the Höchste Pergentsknopp, a particularly elevated and steep section of the legendary Scharzhofberger vineyard in the Saar, prized for its cool exposition and pure Devonian slate soils. This combination of altitude, poor stony soils and a long, slow ripening season produces small, intensely flavored Riesling berries with pronounced acidity and mineral expression. Grapes are typically harvested by hand in multiple passes, ensuring only perfectly ripe, healthy fruit is selected for this Grosses Gewächs bottling. In the cellar, Van Volxem follows a low‑intervention philosophy: gentle pressing, spontaneous fermentation with native yeasts and maturation on fine lees—often in large traditional German oak casks and/or stainless steel—to preserve precision, texture and terroir transparency. The result is a dry Riesling of great purity, focus and aging potential.

This razor‑sharp, bone‑dry Riesling is a superb partner for refined, subtly prepared dishes that complement its citrus drive and mineral backbone.
