Production
Sourced from the steep, slate-rich slopes of the Goldberg vineyard in the Saar, this wine is a pure expression of Mosel terroir, where devon slate soils, cool nights, and long ripening seasons produce Rieslings of remarkable energy and minerality. The grapes are typically hand-harvested at optimal ripeness from low-yielding vines, ensuring meticulous selection and concentration of flavor. In the cellar, Van Volxem favors a precise yet traditional approach to vinification, often fermenting with natural or carefully selected yeasts in stainless steel and/or large neutral oak, allowing the vineyard character—slate spice, salinity, and tension—to shine through without overt winemaking influence. Extended lees contact further enhances texture, structure, and ageworthiness.
