Tasting Notes
In the glass, Coliseo Amontillado VORS shows a deep, dark mahogany hue with a luminous green-tinged rim, a visual clue to its great age. The nose is explosively aromatic and highly complex: balsamic notes and old wood mingle with wild Mediterranean herbs, candied orange peel, roasted nuts, subtle varnish, exotic spices and dried fruits such as dates and figs. On the palate, this Amontillado is dry yet richly textured, with incredible concentration and length. Intense flavors of toasted hazelnut, walnut and almond unfold alongside bitter orange, saline minerality, dried apricot, and a fine, savory umami character from its long aging under flor and oxidative maturation. The acidity is vibrant and perfectly integrated, carrying the flavors through a very long, layered finish with lingering notes of spice, herbs and citrus peel. Thanks to its age and structure, this wine is extremely stable and can be enjoyed over many weeks once opened; properly stored, bottles can age further for years, gaining even more complexity.
Production
Coliseo Amontillado VORS is crafted in Jerez, in the Andalusian south of Spain, where the bright sun, Atlantic breezes and distinctive albariza chalk soils give Palomino Fino grapes their unique character. Grapes are traditionally hand-harvested to preserve freshness, then vinified as a dry base wine before entering the solera system. The wine first ages biologically under a veil of flor yeast, then continues its evolution through prolonged oxidative aging in old American oak casks. Over decades, as it slowly moves through the solera, it concentrates, gains depth and develops the signature nutty, balsamic and saline complexity that defines great, very old Amontillado.
Food & Serving
This is a contemplative wine that shines with intensely flavored dishes. Pair it with aged hard cheeses (Manchego curado, Comté, Parmigiano Reggiano), jamón ibérico, foie gras, mushroom dishes, roasted game birds, or richly spiced tapas. Its bittersweet citrus and nutty depth also work beautifully with dishes featuring truffle, roasted nuts or reductions, and it can be a superb partner to slightly sweet elements like fig or date-based appetizers. Serve lightly chilled, around 14–16°C (57–61°F), to highlight its aromatics and complexity. Decanting for 20–30 minutes in a small carafe is recommended to allow the wine to open fully and show its most intricate layers.
