Tasting Notes
In the glass, the 2019 Talbot shows a deep, vibrant garnet color with a youthful purple rim, signaling concentration and freshness. The nose is expressive and layered, offering blackcurrant, blackberry, and plum, intertwined with notes of cedar, tobacco leaf, graphite, and subtle sweet spice from well-integrated oak. Hints of violets, dried herbs, and a touch of pencil shavings give a very Saint-Julien signature. Production
Château Talbot’s vineyards lie in the heart of Saint-Julien on the left bank of the Gironde, planted on classic gravel soils over limestone and clay that provide excellent drainage and help Cabernet Sauvignon reach optimal ripeness. The maritime climate of the Médoc offers long, even growing seasons, and 2019 was a particularly well-balanced vintage combining ripe fruit with fresh acidity. Grapes are typically harvested parcel by parcel at optimal maturity, often by hand, to ensure careful selection in the vineyard and at the sorting table. Vinification takes place in temperature-controlled vats, where each plot is vinified separately to preserve its character, followed by aging in French oak barrels (a proportion new) for around a year to a year and a half. This careful élevage polishes the tannins, adds subtle spice and complexity, and respects the pure expression of Saint-Julien terroir.
Food & Serving
Talbot 2019 is a natural match for classic dishes such as roast lamb with herbs, grilled or charred ribeye, duck breast, and game birds. It also pairs beautifully with richer dishes like beef Bourguignon, mushroom risottos, truffled dishes, and aged hard cheeses such as Comté or mature cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and structure. For current drinking, decanting for 1–2 hours is recommended to open up the bouquet and soften the tannins; as it matures, a shorter decant of around 30–45 minutes will generally be sufficient.
