Tasting Notes

Production
This Bourgogne Rouge is sourced from carefully selected Pinot Noir plots in Burgundy, reflecting the cooler, limestone-rich terroirs that Sylvain Pataille is renowned for. The soils are typically a mix of clay and limestone, lending both perfume and structure, while the relatively northerly exposures preserve freshness and acidity. Pataille farms organically (and in many parcels biodynamically), favoring low yields, meticulous canopy management and manual harvesting to ensure only perfectly ripe, healthy grapes are brought to the cellar. In the winery, he follows a minimally interventionist approach, often incorporating a proportion of whole clusters to enhance aromatics, texture and spice. Fermentation takes place with indigenous yeasts, followed by aging in mostly older oak barrels to allow the wine to mature and integrate without overwhelming it with wood. The result is a transparent expression of Pinot Noir and place, marked by finesse rather than power.
