This is not a heavy-handed Cabernet, but a finely tuned, classically styled wine that balances intensity with freshness. Celebrated by collectors and critics alike, Spottswoode’s Estate Cabernet has, for decades, stood among the reference points for refined, ageworthy Napa Cabernet.
Tasting Notes
In the glass, the 2021 Spottswoode Estate Cabernet Sauvignon shows a deep, saturated ruby-purple hue that hints at both concentration and youthful energy. The nose is layered and complex, with dark cassis, black cherry and blackberry framed by subtle notes of graphite, tobacco leaf, cedar and a touch of cocoa, along with a cool, lifted nuance that can recall fresh mint or crushed herbs. On the palate, this is medium to full-bodied, precise, and wonderfully balanced rather than overtly opulent. Dark fruit flavors—blackcurrant, black cherry and a hint of plum—are supported by vibrant acidity and finely etched, powdery tannins. There is a clear sense of structure and restraint, with oak lending polish rather than dominance, and a long, persistent finish that feels both firm and fresh. This is a wine built for the long haul; in a good cellar, it has the potential to evolve beautifully over 15–25 years, gaining further complexity, softness in texture, and savory tertiary nuances.
Production
The Spottswoode Estate lies on the western edge of St. Helena, at the base of the Mayacamas Range, where well-drained alluvial and gravelly soils, cool evening breezes, and long, sunny days provide ideal conditions for Cabernet Sauvignon of finesse and depth. The organically farmed estate vineyard (certified for many years) is meticulously tended, with careful bunch selection and hand-harvesting at optimal ripeness, block by block. In the cellar, fruit is typically sorted by hand, then fermented in small lots to preserve the character of each parcel. The blend is anchored by Cabernet Sauvignon with small portions of traditional Bordeaux varieties (such as Cabernet Franc and Petit Verdot) adding aromatic lift and structure. Aging takes place in French oak barrels, a significant portion of which are new, to add texture and complexity while maintaining the purity of fruit and the signature Spottswoode elegance.
Food & Serving
Spottswoode Estate Cabernet Sauvignon 2021 is a natural partner for refined, flavor-packed dishes: think dry-aged ribeye, lamb chops with rosemary, venison, or braised short ribs. It also pairs beautifully with dishes that highlight earthy and herbal elements, such as wild mushroom ragù, truffle pasta, or hard, aged cheeses like Comté or aged Gouda. Serve at 16–18°C (60–65°F) to best showcase its aromatic complexity and structural finesse. For current drinking, decanting for 1–2 hours is recommended to allow the wine to open up; with extended bottle age, a shorter gentle decant to remove sediment will suffice.
