Tasting Notes
In the glass, this Crémant shows a pale straw-yellow color with fine, persistent bubbles that form a delicate mousse. The nose is fresh and inviting, with aromas of green apple, lemon zest, white flowers, and a hint of brioche and toasted almond from time spent on the lees. On the palate, it is dry, lively, and well-balanced, combining Chardonnay’s citrusy precision and chalky minerality with Pinot Noir’s subtle red-fruit nuance and structure. Expect flavors of crisp pear, Granny Smith apple, citrus, and a gentle yeasty note that adds complexity without heaviness. The finish is clean and refreshing, with a saline edge that invites another sip. Production
Sourced from select vineyard sites in Burgundy, the base wines for this Crémant de Bourgogne reflect cool-climate conditions and limestone-rich soils that give natural acidity and finesse. Grapes are harvested relatively early to preserve freshness and aromatic purity, then gently pressed to obtain a fine, clear juice. Fermentation takes place in temperature-controlled stainless steel to maintain bright, primary fruit, and the wines are blended across vintages to ensure a consistent house style. The second fermentation occurs in the bottle following the traditional method, with extended lees aging to develop texture, fine bubbles, and subtle brioche notes before riddling, disgorgement, and a Brut-level dosage.

This Blanc Brut is a versatile partner at the table and a natural choice as an aperitif. Pair it with oysters, shellfish, sushi, and delicate white fish, or enjoy it alongside goat cheese, soft-ripened cheeses, light poultry dishes, and tempura-style vegetables. It’s also excellent with canapés and salty bites such as smoked salmon blinis or charcuterie. Serve well-chilled at around 6–8°C (43–46°F). Decanting is not necessary; simply open the bottle a few minutes before serving to allow the aromas to open up in the glass.

Founded in 1840 in Chablis, Simonnet-Febvre is one of the region’s historic houses and a pioneer in making traditional-method sparkling wines in northern Burgundy.
