Tasting Notes
In the glass, L’Ouverture shows a luminous pale straw to light gold color, animated by a fine, persistent bead of tiny bubbles. The nose opens with bright orchard fruit—crisp apple and ripe pear—layered with white peach, citrus zest, and notes of white flowers, chalk, and a touch of brioche and fresh pastry from extended lees aging. L’Ouverture is sourced primarily from 1er Cru vineyards around Écueil in the Montagne de Reims, where Pinot Noir thrives on chalk and sand over limestone, giving both power and finesse. Frédéric Savart farms his vines with careful, low‑intervention practices to preserve biodiversity and express the character of each parcel. Grapes are harvested by hand at optimal ripeness, sorted in the vineyard and winery to maintain pristine fruit quality. The must is fermented in a combination of stainless steel and oak, with a portion of reserve wines incorporated for added depth and consistency. Extended aging on the lees builds texture and complexity before bottling and secondary fermentation; the wine is finished with a low Extra Brut dosage to let the terroir speak clearly.
