Production
The grapes for Salasar Crémant de Limoux Carte Azur Brut are sourced from hillside vineyards around Limoux in the western Languedoc-Roussillon, where cooler nights and higher altitudes help preserve acidity and aromatic purity. Typical of the appellation, the blend is based on classic local and international varieties well-suited to sparkling wine, harvested at optimal ripeness to retain freshness. The wine is produced using the traditional method, with a first fermentation in tank followed by a second fermentation in bottle. Extended ageing on the lees adds texture, finesse and those subtle pastry-like notes, before riddling and disgorgement prepare the wine for release as a precise, modern expression of Limoux.
