Harvesting is typically done by hand to ensure only perfectly ripe and healthy bunches are selected. In the cellar, the wine is vinified with the same care as the estate’s Côte de Beaune whites: gentle pressing, fermentation in a mix of stainless steel and oak, and aging on fine lees to build texture and complexity while retaining freshness. Oak use is judicious and largely in older barrels, aimed at framing the fruit rather than dominating it.

This Saint-Véran is a versatile food wine that pairs beautifully with classic seafood dishes such as grilled sea bass, scallops, or oysters, as well as roast chicken, veal in light cream sauces, and fine vegetable dishes like asparagus, risotto with spring vegetables, or goat’s cheese tart.
