Tasting Notes
In the glass, Ruinart Blanc de Blancs shines a pale, radiant gold with subtle green reflections and a fine, persistent mousse. The nose is immediately expressive and pure, opening with notes of ripe citrus—lemon zest and yuzu—followed by white peach, fresh pear, and a delicate floral lift of acacia and jasmine. Hints of brioche, almond and chalky minerality give depth and precision. On the palate, this Champagne is both silky and vividly fresh, with a beautifully balanced tension between creaminess and crisp acidity. Flavours of juicy stone fruit, citrus, and green apple are layered with subtle pastry, hazelnut and a saline, chalky finish that feels long, clean and refreshing. While it is delicious on release for its energy and purity, Ruinart Blanc de Blancs can develop further complexity over 3–5 years in a good cellar, gaining more toast, honey and nuttiness while retaining its core freshness.
Production
Ruinart Blanc de Blancs is crafted exclusively from 100% Chardonnay, predominantly sourced from premier and grand cru vineyards in the Côte des Blancs (such as Avize, Le Mesnil-sur-Oger and Cramant) and selected Chardonnay plots in the Montagne de Reims and Sézannais. These cool, chalk-rich slopes give the wine its hallmark tension and minerality. Grapes are harvested by hand to ensure optimal selection and delicate handling. Vinification is carried out in stainless steel to preserve aromatic purity, with gentle pressing of whole clusters, temperature-controlled fermentations, and a careful blending of multiple vintages to achieve Ruinart’s signature style. The wines then undergo secondary fermentation in bottle and extended aging on the lees in the house’s historic chalk cellars (crayères), contributing to the fine mousse, texture and subtle autolytic complexity.
Food & Serving
Ruinart Blanc de Blancs is a superb aperitif Champagne and an elegant partner to refined seafood and light dishes. It pairs beautifully with oysters, scallop carpaccio, sushi and sashimi, ceviche, lightly grilled fish, and tartares of sea bass or tuna. It also complements fresh goat cheese, citrus-dressed salads and delicate vegetable dishes such as asparagus or artichokes. Serve well chilled at around 8–10°C (46–50°F) to highlight its freshness and aromatics. While decanting is generally not necessary, pouring the wine into larger-bowled white wine glasses rather than narrow flutes can help express its full aromatic range and texture.
