Production
Sourced from selected hillside vineyards in the Valdobbiadene area of Veneto, Giustino B draws its character from steep, well-drained slopes with predominantly rocky, mineral-rich soils and a cool, ventilated microclimate that preserves acidity and aromatic intensity. Grapes are typically harvested by hand to ensure only the healthiest Glera clusters are brought to the cellar, often in multiple passes to capture optimal ripeness and freshness. After gentle pressing and cold settling, the base wine is fermented at controlled low temperatures in stainless steel to retain delicate aromatics. The second fermentation takes place using the Charmat (Martinotti) method in pressurized tanks, with extended time on the lees to enhance texture, mousse quality, and complexity before bottling at an Extra Dry dosage that highlights both fruit purity and elegance.
