Tasting Notes
In the glass, the 2016 Promontory shows a deep, almost opaque garnet-purple hue that hints at its concentration and youth. The nose unfurls slowly and steadily, moving from bold notes of black cherries and blueberry pie into more complex layers of crème de cassis, dark chocolate, black earth and truffle, with subtle tones of licorice, cumin, mossy bark and a savory beef jus character. On the palate, the wine is full-bodied and densely packed with dark, muscular fruit, yet remarkably precise and controlled. A framework of very firm, fine-grained tannins supports the core, giving the wine both stature and finesse. There is vibrant underlying acidity that brings lift and definition, ensuring the richness never feels heavy. The finish is exceptionally long and nuanced—at once powerful, hedonistic, and intellectually engaging. Production
Promontory is sourced from a rugged, isolated section of the western hills of Napa Valley, bordered by wild, untamed woodland and marked by dramatic slopes, varied exposures, and a complex patchwork of volcanic and sedimentary soils. The challenging terrain naturally limits yields and produces small, intensely flavored berries. Harvest is conducted by hand, parcel by parcel, to capture optimal ripeness and preserve the character of each micro-site. In the cellar, fermentation typically takes place in a mix of traditional vessels, with careful, gentle extraction to respect the purity and structure of the fruit. The wine is then aged for an extended period in carefully selected barrels, allowing the powerful tannins to integrate and the layered aromatics to develop before release from the estate.
Food & Serving
This is a serious, structured Napa Valley red best paired with equally refined and flavorful dishes. Think dry-aged ribeye, roast lamb with rosemary and garlic, venison, or slow-braised short ribs; it also works beautifully with truffle-infused dishes, wild mushrooms, and aged hard cheeses such as Comté or Parmigiano Reggiano. Serve at 16–18°C (60–64°F) to showcase both aromatics and structure. Decant generously—at least 2–3 hours for a young bottle—to allow the wine’s tightly wound core to open, and even longer if you prefer a more expressive, velvety profile.
