Tasting Notes
In the glass, the 2020 Pajè Riserva shows a luminous garnet core that shades to brick-orange at the rim, already hinting at Nebbiolo’s classic evolution. The nose is intensely aromatic, with layers of dark cherry, black raspberry and macerated strawberry wrapped in notes of anise, dried rose petals, violets and sweet tobacco. Underneath, you’ll find balsamic tones of resin and camphor, alongside hints of leather, cedar, licorice and subtle tar and spice. On the palate, the wine is medium-bodied but powerful, driven by firm, finely etched tannins that give it real presence and structure. Flavors echo the nose, with dark red and black fruits, blood orange zest, dried herbs and a savory, almost saline mineral streak that speaks clearly of Pajè’s terroir. The acidity is vibrant and mouthwatering, keeping everything focused and energetic. This 2020 has the stuffing and structure to age gracefully for 15–20 years or more, gradually gaining truffle, forest floor and tertiary complexity while the tannins melt into a silkier, more expansive texture.
Production
Pajè is one of Barbaresco’s historic crus, a relatively small, amphitheater-like vineyard just below the village, with calcareous marl and limestone-rich soils that give Nebbiolo both aromatic lift and a firm, mineral backbone. The vines here benefit from excellent exposure and good drainage, producing grapes with natural concentration and high acidity. Produttori del Barbaresco harvests the fruit by hand, parcel by parcel, selecting only the best clusters for this Riserva. In the cellar, the wine is traditionally vinified: fermentation in temperature-controlled tanks with extended maceration on the skins to extract color, tannin and aromatics, followed by long aging in large neutral oak botti. This classic approach preserves the purity of fruit, the character of the Pajè cru and the unmistakable personality of Barbaresco Nebbiolo, rather than overlaying it with new wood.
Food & Serving
This Pajè Riserva is a superb partner for rich, savory dishes such as braised veal shank (osso buco), long-cooked beef brasato, game birds, lamb shoulder, and classic Piemontese fare like tajarin with ragù or mushroom and truffle dishes. Mature, hard cheeses—especially aged Parmigiano-Reggiano, Pecorino or well-aged alpine cheeses—also work beautifully with its tannic grip and aromatic depth. Serve at 16–18°C (60–64°F); if drinking young, decant for 1–2 hours to let the aromatics unfurl and the tannins soften. With additional bottle age, a shorter decant or simply opening the bottle 30–45 minutes before serving is usually enough to let the wine fully express itself.
