Sauvignon Blanc grapes for Cuvée Riquette are typically harvested at optimal ripeness to preserve acidity and aromatic intensity, often picked parcel by parcel to respect subtle differences in soil and exposure. In the cellar, the must is gently pressed and fermented at controlled, cool temperatures in stainless steel to capture purity of fruit and terroir.
