Tasting Notes
In the glass, the 2015 Cuvée Sir Winston Churchill shows a luminous, deep golden hue with a fine, persistent bead that speaks to its extended aging on lees. The nose is complex and layered: ripe citrus and stone fruits—think baked lemon, nectarine and Mirabelle plum—interwoven with notes of brioche, toasted hazelnut, crème pâtissière, acacia honey and a subtle smoky, chalky minerality. On the palate, this is full-bodied and vinous, with Pol Roger’s hallmark refinement. A broad, creamy texture carries flavors of yellow orchard fruit, lemon curd, grilled almonds, nougat and freshly baked pastry, lifted by vibrant acidity and a saline, chalk-driven core. The finish is long, mouth-coating and precise, leaving lingering notes of toasted nuts, citrus zest and subtle spice. Already seductive in its youth, the 2015 has the structure and concentration to evolve beautifully for 15–25 years or more in a good cellar.
Production
Cuvée Sir Winston Churchill is crafted exclusively from old-vine Pinot Noir and Chardonnay sourced from Pol Roger’s best Grand Cru vineyards in Montagne de Reims and Côte des Blancs, with a clear dominance of Pinot Noir for depth and structure. The chalk-rich soils and cool continental climate lend both power and mineral precision. Grapes are hand-harvested at optimal ripeness, with strict selection in the vineyard and at the winery to ensure only the finest fruit makes the cut. Fermentation takes place in temperature-controlled stainless-steel tanks, followed by a full malolactic fermentation to harmonize richness and freshness. After blending, the wine is bottled for the secondary fermentation and then aged for many years on its lees in Pol Roger’s deep, cool cellars—among the longest aging regimes in Champagne—before riddling, disgorgement and a carefully judged dosage that balances opulence with tension.
Food & Serving
This is a gastronomic Champagne best enjoyed at the table. It pairs beautifully with refined dishes such as lobster with butter or citrus, seared scallops, turbot or Dover sole with beurre blanc, roast chicken with truffle, veal in cream sauce, or aged Comté and Parmesan. Its richness and structure also handle foie gras and mushroom-based dishes with ease. Serve at 10–12°C (50–54°F) to allow the full aromatic complexity to unfurl. For maximum expression, especially in its youth, pour into a generous white wine glass and consider a short 20–30 minute decant before serving.
