Tasting Notes
In the glass, the wine shows a pale lemon color with green reflections, signaling its youth and freshness. The nose is immediately inviting, with notes of lemon zest, green apple and white flowers, layered over hints of crushed stone, chalk and a subtle saline edge. On the palate, this Aligoté is brisk and lively, with a spine of citrus—think lemon and grapefruit—complemented by tart pear, green plum and a touch of almond. The texture is clean and linear, lifted by bright acidity that keeps everything precise and mouthwatering. A flinty, mineral streak runs through to the finish, leaving a refreshing, lightly saline aftertaste. Enjoyable now for its vibrancy, it can comfortably evolve over the next 3–5 years, gaining a touch of roundness and complexity while retaining its tension.
Production
Sourced from selected parcels in the Côte d’Or, Pierre Morey’s Bourgogne Aligoté benefits from classic Burgundian terroir: limestone-rich soils with clay components that favor tension, minerality and aromatic clarity. The vines are worked according to organic and biodynamic principles, with careful attention to soil health and low yields to concentrate flavor. Harvest is carried out by hand to ensure only healthy, perfectly ripe Aligoté grapes make it to the cellar. In the winery, fermentation takes place with indigenous yeasts, often in a combination of stainless steel and neutral vessels to preserve freshness and purity of fruit. The wine is then aged on fine lees for added texture and complexity, with minimal intervention and restrained use of sulfur to allow the grape and terroir to speak clearly.
Food & Serving
This Bourgogne Aligoté is a classic partner to oysters, shellfish and simply prepared fish dishes—think oysters on the half shell, shrimp cocktail, grilled sea bass or ceviche. It also pairs beautifully with goat cheese, light salads, vegetable tempura and charcuterie, and is an excellent match for the Burgundian specialty gougères (cheese puffs). Serve well chilled at around 8–10°C (46–50°F) to highlight its brightness and aromatic lift. Decanting is not required, but pouring the wine into a roomy white-wine glass and giving it a few minutes in the glass will help the citrus and floral notes unfold.

Domaine Pierre Morey, now closely linked with the family’s négociant label Morey-Blanc, is one of the benchmark names in Meursault and the Côte de Beaune. The Morey family has deep roots in Burgundy, and Pierre himself is widely respected for his tenure as winemaker at the legendary Domaine Leflaive, as well as for being an early adopter of organic and biodynamic viticulture in the region. Today, under the combined guidance of Pierre and his daughter Anne, the estate produces incisive, terroir-expressive whites and refined reds that are highly sought after by Burgundy lovers worldwide.
