In the glass, this Champagne shows a bright, pale gold color with a fine, persistent bead that hints at careful, traditional-method craftsmanship. The nose opens with ripe orchard fruits—pear, golden apple and Mirabelle plum—layered with citrus peel, white flowers and a subtle touch of brioche and fresh pastry. On the palate, Grande Réserve Brut is lively and well-structured, with the juicy, rounded character of Pinot Meunier framed by the finesse of Chardonnay and the subtle backbone of Pinot Noir. Expect flavors of crisp apple, lemon cream, stone fruit and a hint of hazelnut, supported by a refreshing, mouthwatering acidity and a clean, dry finish. As a non-vintage Brut, it is designed for drinking upon release but will hold nicely for a few years, gaining a bit more brioche, honeyed nuance and softness with short-term cellaring.
Production
Sourced from vineyards in the heart of the Champagne region, Pierre Mignon’s Grande Réserve Brut draws particularly on the Marne Valley’s chalk and limestone soils, which lend both finesse and minerality. Grapes are harvested by hand to preserve berry integrity and allow rigorous sorting in the vineyard. The base wines are vinified parcel by parcel in temperature-controlled stainless steel to maintain freshness and purity of fruit, with reserve wines incorporated to ensure a consistent house style. After blending, the wine undergoes secondary fermentation in the bottle following the traditional méthode champenoise, then rests on its lees for an extended period to develop texture, fine bubbles and subtle autolytic notes before disgorgement and dosage to a Brut level.
Food & Serving
This Champagne is highly versatile at the table and an excellent choice as an aperitif with canapés, gougères or lightly salted nuts. It pairs beautifully with oysters, prawns, smoked salmon, sushi, white fish tartare, and delicate shellfish dishes, as well as poultry, soft cheeses like Brie and Camembert, and lightly creamy pastas. Serve well-chilled at 8–10°C (46–50°F) in a tulip-shaped flute or white wine glass to allow the aromas to open. A brief 10–15 minutes out of the fridge before serving is sufficient; extended decanting is not necessary, though pouring the first glass and giving it a few minutes in the glass will help the wine fully express its bouquet.
