Tasting Notes
In the glass, Mouton Rothschild 2016 shows a deep, opaque garnet-purple color with inky concentration and a vibrant rim, hinting at both youth and energy. The nose is layered and refined, opening with classic Pauillac notes of blackcurrant, cassis liqueur and blackberry compote, followed by cedarwood, cigar box, graphite and pencil shavings. With air, more nuanced aromas of violets, dark chocolate, espresso, roasted coffee bean and a delicate hint of mint and tobacco leaf begin to emerge. On the palate, this vintage is structured yet remarkably suave, with a dense core of black fruit wrapped in ultra-fine, polished tannins. Flavors of ripe cassis, black cherry and plum are intertwined with licorice, cocoa, cedar spice and a faint saline, mineral edge typical of great Pauillac gravels. The wine is full-bodied but impeccably balanced, driven by fresh, mouthwatering acidity that keeps it lively and elongated. The finish is long, focused and persistent, with lingering notes of dark fruit, graphite and subtle oak. This 2016 has superb aging potential; it can be enjoyed after a long decant now, but will truly blossom and gain complexity over the next 10–30 years, and in top cellars, longer still.
Production
Mouton Rothschild lies on the northern edge of Pauillac, on the Left Bank of the Gironde, where deep gravel soils over limestone and clay provide perfect drainage and ideal conditions for Cabernet Sauvignon to thrive. The 2016 blend is dominated by Cabernet Sauvignon, supported by Merlot, Cabernet Franc and Petit Verdot, each parcel harvested by hand at optimal ripeness and sorted meticulously in the cellar. Vinification takes place in temperature-controlled vats, allowing precise parcel-by-parcel fermentation to capture the character of each terroir block. The grand vin is then matured in 100% new French oak barriques, where it undergoes malolactic fermentation and extended élevage, integrating the oak’s fine-grained tannins and subtle spice while preserving the wine’s purity, energy and Pauillac identity.

Mouton Rothschild 2016 is a natural partner for refined, protein-rich dishes that complement its structure and depth, such as dry-aged ribeye, roast lamb with rosemary and garlic, venison, or slow-braised beef cheeks. It also pairs beautifully with game birds, truffle-accented dishes, and mature hard cheeses like Comté, aged Gouda or well-aged Manchego. Serve at 16–18°C (60–64°F) in large Bordeaux stems to allow the aromatics to fully unfold. For drinking now, decant generously for 2–3 hours to soften the tannins and reveal the wine’s full complexity; bottles cellared for 15+ years may require a slightly shorter, more gentle decant to preserve delicate tertiary nuances.
