Production
The 2005 Mouton Rothschild is sourced from the estate’s prime Pauillac vineyards on the Left Bank of the Gironde, where deep gravel soils over limestone and clay offer excellent drainage and perfectly suited conditions for Cabernet Sauvignon. The vintage was marked by a warm, dry growing season, enabling slow, even ripening and superb phenolic maturity. Grapes are harvested by hand in small parcels, with rigorous sorting in the vineyard and at the winery to ensure only pristine fruit is used. Vinification takes place in temperature-controlled vats, with plot-by-plot fermentation to respect the character of each parcel, followed by élevage in a high proportion of new French oak barriques (typically around 80–100%) for around 18–22 months. The final blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot is meticulously assembled to deliver Mouton’s signature combination of richness, structure and finesse.

This 2005 Pauillac is a natural partner for refined, full-flavored dishes such as roasted or grilled lamb (rack, saddle, or leg), dry-aged ribeye or entrecôte, venison, and other game meats. It also pairs beautifully with truffle dishes, mushroom-based sauces, and mature hard cheeses like Comté, aged Gouda or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) in large Bordeaux stems to allow the bouquet to open.
