Tasting Notes

The natural cloudiness is part of its charm, signaling a minimally handled wine that’s very much alive. On the nose, expect bright notes of green apple, lemon zest and lime, layered with white flowers, wet stone and a faint herbal edge—think lemon balm or fresh hay. Production
The grapes for Pat Nat Moje White come from Milan Nestarec’s organically farmed vineyards in the Velkopavlovická subregion of Moravia, where Riesling thrives on a mix of loess, clay and limestone-rich soils. The vines are tended by hand with an emphasis on biodiversity and low yields, allowing the fruit to ripen with intense flavor while retaining brisk natural acidity. Harvest is done manually, with careful selection in the vineyard to ensure only healthy bunches make it to the cellar. Fermentation starts spontaneously with native yeasts in tank, and the wine is then bottled before fermentation finishes—following the ancestral (pét-nat) method—so that the remaining sugars complete their transformation into bubbles in the bottle. The wine remains on its lees, is typically unfiltered and sees little to no added sulfur, resulting in a gently cloudy, textural sparkling wine that faithfully reflects its Moravian origin.
