Tasting Notes
In the glass, the 2023 Abtsberg Kabinett shows a pale, shimmering straw-yellow color with greenish highlights, hinting at its youth and freshness. The nose is initially marked by the signature Abtsberg character: smoky flint, cool slate minerality and a touch of wild herbs. With a little air, layers of fruit begin to unfold—lime zest, white peach, crisp green apple and a gentle exotic touch reminiscent of lychee and blossom honey, all framed by delicate floral tones. On the palate, this is a featherweight in alcohol yet full of flavor, with a beautifully poised interplay of ripe fruit and zesty acidity. Juicy citrus, stone fruit and a hint of tropical nuance are balanced by a finely etched mineral backbone and subtle herbal notes. The natural sweetness is perfectly integrated, making the wine feel vibrant rather than overtly sweet. Production
The Abtsberg vineyard, historically reserved for the abbots of the Benedictine monastery of St. Maximin, is one of the crown jewels of the Mosel-Saar-Ruwer. Steep, south- to south-east-facing slopes with blue Devonian slate soils create an exceptionally cool, mineral-rich terroir that is ideal for Riesling of great finesse and longevity. Grapes for the Kabinett are typically hand-harvested at moderate ripeness, allowing for precise selection of healthy, aromatic berries while preserving a vibrant acidity. In the cellar, Maximin Grünhaus works with a gentle, minimalist approach: careful pressing, slow, temperature-controlled fermentation—often with native yeasts—and maturation in traditional large wooden casks and/or stainless steel. This respectful vinification aims to capture the purity of fruit, the clarity of sweetness–acidity balance and the unmistakable mineral expression of Abtsberg.

This Kabinett’s delicate sweetness and lively acidity make it a versatile partner at the table. It shines alongside lightly spiced Asian dishes, sushi and sashimi, Thai salads, ceviche or dishes with ginger and lemongrass. It is equally at home with German classics like roast pork with crackling, fine charcuterie, young goat cheese, fresh cheeses or lightly aged soft cheeses, as well as simple pleasures such as grilled white fish or seasonal salads. Serve well-chilled at about 8–10 °C. A brief decant of 15–20 minutes, or simply giving it time to open in the glass, helps the aromatic complexity unfold, especially in the first few years after release.
