Tasting Notes
In the glass, Shaman 19 Rosé Brut Nature shows a luminous, pale salmon-pink hue with fine, persistent mousse. On the nose, expect lifted aromas of wild strawberry, raspberry, blood orange and redcurrant, layered with rose petals, chalky minerality and a hint of fresh brioche and spice from time on lees. The palate is precise, dry and tense, with a juicy core of red berries, citrus zest and hints of pomegranate, wrapped in a salty, chalk-driven structure. The absence of dosage lets the terroir speak clearly, giving a mouthwatering, linear finish and a very clean aftertaste. While already expressive on release, it will gain further complexity and subtle autolytic nuances over the next 3–5 years if cellared well.

Production
Sourced largely from biodynamically farmed grand cru vineyards around Ambonnay in Champagne, this cuvée reflects chalk-rich soils and cool-climate exposition that favor finesse and tension. Grapes are harvested by hand to ensure optimal selection and gentle handling. Vinification typically involves spontaneous fermentations with indigenous yeasts, significant use of oak barrels or foudres for élevage, and minimal intervention in the cellar. As a Brut Nature, it is bottled without dosage and with very low added sulfur, emphasizing transparency of fruit and terroir.

Food & Serving
This rosé Champagne is a versatile partner at the table: pair it with tuna tartare, salmon sashimi, grilled prawns, or charcuterie such as jambon de Paris and pâté en croûte. It also shines with poultry dishes, light veal preparations and soft, bloomy-rind cheeses. Serve well-chilled at around 8–10°C (46–50°F). A brief 15–20 minutes in a decanter or simply allowing it to open in the glass can help the aromas unfurl and soften the edges of its vibrant acidity.
