Tasting Notes
In the glass, Shaman 21 Rosé shows a delicate, luminous salmon-pink hue with fine, persistent bubbles forming a refined mousse. The nose unfolds with wild strawberries, redcurrants and raspberry leaf, layered over blood orange, pink grapefruit zest and subtle florals, with a faint hint of chalk, brioche crumb and crushed rose petals. On the palate, this is brisk, bone-dry and beautifully textural, with a vivid line of acidity carrying crunchy red fruit, citrus and a touch of pomegranate. The Chardonnay brings tension, lift and a saline edge, while the Pinot Noir adds body, gentle tannic grip and a whisper of spice. The finish is long, mouthwatering and very precise, marked by chalky minerality and red-berry perfume. Production
Shaman 21 Rosé Brut Nature is sourced from organically and biodynamically farmed Grand Cru parcels in the heart of Champagne, primarily on the chalk-rich slopes of villages such as Ambonnay and Bouzy. These sites combine deep chalk with thin topsoils, giving naturally low yields, excellent drainage and a signature mineral cut to the wines. Harvest is carried out by hand, with careful selection of bunches in the vineyard. Fermentation typically takes place with indigenous yeasts, often in oak barrels or small vats, allowing for gentle micro-oxygenation and texture without overt oak flavor. A portion of Pinot Noir is vinified as still red wine to provide the rosé color and extra structure, then blended with Chardonnay and Pinot Noir base wines. After secondary fermentation in bottle, the Champagne rests on its lees for extended aging to build complexity and finesse, and is released as Brut Nature with no dosage, highlighting the pure expression of site and season.
Food & Serving
This ultra-dry Grand Cru rosé Champagne is a superb partner for refined, savory dishes as well as elevated aperitif moments. Pair it with tuna tartare, salmon sashimi, lobster, or seared scallops, as well as charcuterie, duck rillettes, or roast chicken with herbs. It also works beautifully with soft cheeses like Brie de Meaux or fresh goat’s cheese, and with dishes featuring beetroot or roasted root vegetables. Serve well chilled, around 8–10°C (46–50°F). Lightly chilling in an ice bucket for 15–20 minutes before serving is ideal; decanting is not necessary, but pouring the first glass and giving it a few minutes in the glass will allow the aromatics to fully open.
