Tasting Notes
In the glass, Shaman 21 shows a luminous pale gold color with fine, persistent bubbles that form an elegant, lively mousse. The nose opens with notes of citrus zest, crisp green apple and pear, layered with white flowers, chalky minerality, and hints of toasted almond and fresh brioche, all underpinned by a delicate saline edge. On the palate, this Brut Nature is taut, dry, and finely etched, with a racy acidity that drives flavors of lemon, orchard fruits, crushed stone, and subtle red berry from the Pinot Noir. The texture is both silky and energetic, building toward a long, linear finish marked by chalk, grapefruit pith, and a gentle nuttiness. Production
Shaman 21 is sourced from Marguet’s certified biodynamic Grand Cru parcels in the Montagne de Reims, primarily around Ambonnay and neighboring Grand Cru villages. These vineyards sit on classic Champagne chalk and limestone soils, which lend the wine its hallmark tension and mineral backbone. Grapes are harvested by hand at optimal ripeness to preserve freshness and balance, then gently pressed and vinified with minimal intervention. Fermentation typically takes place in a combination of tanks and oak barrels, with indigenous yeasts where possible, to enhance texture and depth while maintaining precision. As a Brut Nature, no dosage is added at disgorgement, so the final wine transparently reflects the character of its terroir and vintage base.

This Champagne’s bone-dry, mineral style makes it an excellent match for refined, clean-flavored dishes. Pair it with freshly shucked oysters, scallop crudo, sushi and sashimi, or simple grilled fish with lemon and herbs.
