Tasting Notes
In the glass, Lune à Boire Bulle shows a pale straw-yellow hue with silvery reflections and a fine, persistent mousse that speaks to careful secondary fermentation. On the nose, it opens with notes of green apple, crisp pear and citrus zest, followed by hints of white flowers, fresh almond, brioche and a subtle mineral edge. The palate is dry, precise and wonderfully refreshing, with a fine, creamy bead. Auxerrois lends gentle roundness and stone-fruit charm, Chardonnay adds tension and length, and Pinot Blanc brings lift and delicacy. Expect flavors of lemon curd, ripe apple, crunchy pear and a touch of pastry and hazelnut, all carried by a vibrant, saline finish. While it is delicious on release and meant for joyful, immediate drinking, this Crémant can comfortably evolve for a few years in bottle, gaining a bit more creaminess and complexity.

Production
Lune à Boire Bulle is crafted from organically farmed vineyards in Alsace, rooted in a mosaic of sandstone, limestone and clay soils that contribute both freshness and finesse. The grapes—Auxerrois, Chardonnay and Pinot Blanc—are picked by hand at optimal ripeness to preserve acidity and aromatic purity. After gentle pressing, the base wines are fermented with careful temperature control, often using indigenous yeasts to reflect the character of the terroir. The traditional method (méthode traditionnelle) is used for the second fermentation in bottle, followed by aging on the lees to build texture, fine bubbles and pastry-like complexity, before disgorgement with a measured, balanced dosage.

Food & Serving
This Crémant d'Alsace is a versatile partner at the table, shining alongside oysters, shrimp, sushi, ceviche and other delicately prepared seafood. It also works beautifully with charcuterie, soft cheeses (Brie, Camembert, young goat’s cheese), tarte flambée, light poultry dishes and vegetable tarts. Serve well-chilled at around 6–8°C (43–46°F) to highlight its precision and freshness. A brief 5–10 minutes in the glass or an open bottle is enough to let the aromas unfurl; extended decanting is not necessary for this style.
