Tasting Notes

Production
This single malt is crafted at The Macallan Estate in Speyside, in the heart of Scotland’s whisky country, where cool, temperate weather and pure water from the River Spey and local springs provide ideal conditions for slow, steady maturation. Barley is traditionally malted and distilled in The Macallan’s characteristically small copper stills, designed to create an especially rich, oily new-make spirit. The defining feature of this whisky is its exclusive maturation in hand‑crafted sherry-seasoned oak casks: carefully selected European oak trees are felled and air-dried for years before being coopered in Jerez, southern Spain. These casks are seasoned with fine Oloroso sherry from renowned bodega González Byass for up to five years, then emptied and shipped to Scotland, where they are filled with new-make Macallan spirit. After at least 18 years of slow aging in these casks, a precise selection and marrying of barrels yields the final 2025 Release, with no compromise on colour or character derived purely from the oak.
Food & Serving
This is a contemplative whisky that shines on its own, but it also pairs beautifully with rich, flavourful dishes and indulgent desserts. Try it alongside roast duck with orange and spice glaze, slow-braised lamb with Moroccan seasoning, or a cheeseboard featuring aged Manchego, mature cheddar or blue cheese. For dessert, dark chocolate fondant, orange and almond cake, or dried fruit and nut tarts are outstanding companions.
