In the cellar, the fruit is sorted, gently destemmed, and vinified as a still red wine rather than for sparkling base—allowing longer maceration to extract delicate color, aromatics, and fine tannins. Fermentation takes place in small vats, followed by aging in carefully selected French oak barrels (a portion new, a portion used) to add subtle structure and complexity without overshadowing the purity of Pinot Noir or the signature chalky finesse of Champagne.
