The grapes are harvested by hand to preserve fruit integrity and allow strict selection of only the best clusters. Fermentation typically takes place in temperature-controlled stainless steel tanks to emphasize freshness and precision, followed by extended aging on the lees in bottle—often several years—to build texture and complexity. No dosage is added at disgorgement, resulting in a true Brut Nature style that faithfully reflects the terroir and the house’s minimalist, precise approach to vinification.
