Tasting Notes
In the glass, this Champagne shows a vivid, shimmering raspberry to pale cherry hue with fine, persistent bubbles and a delicate mousse. The nose is pure and vibrant, offering notes of wild strawberries, red currants and crushed raspberries layered with blood orange, rose petals, subtle spice and a chalky mineral edge. On the palate it is dry, tense and vinous, with the feel of a fine Pinot Noir carried by the energy of Champagne. Juicy red berry fruit and pomegranate are framed by citrus zest, a touch of rhubarb and gentle herbal and floral tones. The extra-brut dosage keeps everything focused and mouthwatering, while the 1er Cru origins bring a long, saline, mineral finish. Production
Sourced from Larmandier-Bernier’s 1er Cru Pinot Noir vineyards in Champagne, primarily on chalk and limestone-rich soils, this rosé is very much an expression of its terroir. The estate farms organically and biodynamically, encouraging low yields, ripe but balanced fruit and a strong sense of place. Grapes are harvested by hand at optimal ripeness and then macerated on the skins for a short period—the classic saignée method—to extract color, aroma and gentle tannin before the rosé juice is drawn off. Fermentation takes place with indigenous yeasts, often in a mix of stainless steel and neutral oak, and the base wines are allowed to develop texture and complexity on their lees. After the prise de mousse (second fermentation in bottle), the wine ages on its lees for an extended period before disgorgement, and only a very low, extra-brut dosage is added to preserve tension, purity and minerality.
Food & Serving
This is a serious food rosé Champagne that shines at the table. Its depth and structure make it an excellent match for tuna tartare, salmon, grilled prawns, sushi and sashimi, or richer shellfish dishes like lobster and langoustines. It also works beautifully with charcuterie, duck breast, roasted poultry, and even lightly spiced Asian cuisine where its freshness cuts through richness. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromatics open. A brief 10–15 minutes in the glass or in a decanter (for mature bottles) can help the wine reveal its full spectrum of red fruit and mineral notes.
