Tasting Notes
In the glass, Nature de Craie pours a pale, luminous straw yellow with silvery-green reflections and an extremely fine, persistent bead. Nature de Craie is sourced from carefully selected Premier Cru parcels rooted in pure chalk soils, primarily Chardonnay vineyards that give the wine its laser‑sharp minerality and tension. Laherte Frères farms these sites according to sustainable, organic and largely biodynamic principles, with an emphasis on soil health, low yields and handwork in the vines. The grapes are harvested by hand at optimal ripeness to ensure both freshness and depth, then pressed gently in traditional Coquard presses. Fermentation typically takes place with indigenous yeasts in a mix of neutral oak barrels and vats, preserving the character of each parcel while adding subtle texture. The base wines are aged on lees with minimal intervention, and the final blend undergoes a secondary fermentation in bottle, followed by an extended period of lees aging in the cellar. True to its name, the wine is bottled with zero dosage (no added sugar), allowing the chalky terroir and natural balance of the fruit to shine through unadorned.
Food & Serving
This Champagne is a superb partner for dishes that echo its purity and saline edge: think oysters on the half shell, scallop crudo, tartare of sea bass, sushi and sashimi, or simply prepared white fish with lemon and herbs. It also pairs beautifully with goat’s cheese, fresh cheeses, tempura vegetables, and delicately seasoned seafood pastas. Serve well chilled, ideally around 8–10 °C (46–50 °F), to highlight its precision and minerality; as it warms slightly in the glass, more nuance will emerge.
