Tasting Notes
In the glass, REVOLUTION White Solera typically shows a hazy, pale to medium golden color, reflecting its minimal intervention and unfiltered character. The nose is expressive and complex, with layers of ripe stone fruit, citrus peel, and orchard fruit supported by floral notes and a gentle herbal lift. Subtle hints of lees, spice and a light oxidative nuance may appear, adding depth and intrigue. On the palate, the wine is both structured and lively: the Chardonnay component brings texture, grip and a gentle phenolic backbone, while Scheurebe delivers aromatic fruit, juiciness and freshness. Riesling contributes tension, crystalline acidity and length. Expect flavors of yellow apple, quince, citrus, white peach and a touch of tropical fruit, wrapped in a finely savory, almost saline edge. The finish is long, slightly tactile and mouth‑watering, making it as engaging as it is refreshing. Thanks to the solera approach and the inclusion of older base wines, this cuvée has very good stability and can develop further complexity over a few years in bottle, though it is already highly enjoyable upon release.
Production
The grapes for REVOLUTION White Solera come from 25–40‑year‑old vines rooted in loess and calcareous sandstone in the Weinviertel, a terroir that brings both ripeness and a distinct mineral drive. Farming is organic ("Bio") and guided by a natural wine mindset, with careful hand‑work in the vineyard and selective harvesting to ensure healthy, concentrated fruit. The 2020 release is composed of 50% Chardonnay, 25% Scheurebe and 25% Riesling, each drawn from multiple vintages and élevage styles within a solera system. Chardonnay 2019 undergoes seven days of skin maceration and is aged in amphorae and 1,000‑liter casks to build structure and texture; Scheurebe from 2016–2018 is fermented on the berries and matured in 600‑liter barrels to emphasize fruit and freshness; Riesling components from older vintages are blended in for vibrancy, complexity and length. Fermentations proceed with indigenous yeasts, and the wine is handled gently with minimal intervention to preserve its authentic character.

This is a versatile food wine that shines with a wide range of dishes, from modern vegetable‑driven cuisine to thoughtfully prepared seafood and white meats. Try it with grilled or roasted vegetables, asparagus, artichokes, herb‑crusted fish, ceviche, sushi, or poultry in light, citrus‑ or herb‑based sauces; it also stands up beautifully to aromatic, mildly spicy Asian dishes and richer vegetarian plates involving root vegetables and grains. Serve at about 10–12°C (50–54°F) to balance freshness with aromatic expression. A short decant of 15–30 minutes can help the wine open up and harmonize, especially if served soon after opening or at the cooler end of the temperature range.
