The grapes for NUMEN Muskateller Bio 2019 come from Weingut Johannes Zillinger’s oldest Gelber Muskateller parcels in the rolling hills of the Weinviertel, a cool-continental corner of northeastern Austria known for its loess, clay and limestone soils. These soils, combined with breezy conditions and marked diurnal swings, help preserve acidity and aromatic precision while allowing the old vines to dig deep and produce naturally low yields with excellent flavor concentration. The estate is farmed biodynamically, with a strong emphasis on soil health, biodiversity and minimal intervention in the vineyard; harvesting is done by hand to ensure only perfectly ripe, healthy bunches make it to the cellar. In the winery, Zillinger follows a philosophy of “as little as possible, as much as necessary.” For the NUMEN range, he works with intrazellular (largely carbonic) fermentation on whole clusters, encouraging fermentation to begin inside the berries and preserving intense aromatics and fine-grained tannin.
