Tasting Notes
In the glass, the 2023 Kieselstein shows a pale straw to light lemon color with green reflections, signaling freshness and youth. The nose is initially restrained and finely nuanced, with cool citrus notes (lime, grapefruit zest), green apple, white peach and hints of white flowers, all framed by a pronounced stony, flinty minerality that lives up to the wine’s name. On the palate, it is racy and precise, with a lively, finely knit acidity that drives the wine forward and highlights its mineral backbone. Citrus and crunchy orchard fruit are joined by subtle herbal tones and a delicate saltiness on the finish, giving the wine both tension and length. The texture is elegant and almost silky despite the drive and intensity, offering a very clean, dry profile. Enjoyable now for its youthful brightness, it also has the structure and acidity to develop additional complexity over the next 5–7 years, gaining more depth, spice and tertiary notes with a bit of bottle age.
Production
The Kieselstein cuvée is sourced from vineyards around Rümmelsheim in the Nahe, where gravel and pebble-rich soils over mixed sediments promote excellent drainage and naturally limit yields, concentrating aroma and minerality in the Riesling grapes. The cool climate and marked diurnal temperature swings help preserve acidity and aromatic finesse. Grapes are typically harvested by hand to ensure careful selection and brought to the cellar in small boxes to avoid oxidation or damage. Fermentation is carried out spontaneously with native yeasts, a hallmark of Joh. Bapt. Schäfer’s style, allowing the terroir rather than additives to shape the wine. The Riesling then matures on its fine lees in stainless steel and/or traditional large vats, preserving freshness, precision and that unmistakable stony character the name ‘Kieselstein’ promises.
Food & Serving
This Riesling is an outstanding and versatile food wine, particularly well-suited to light, flavorful dishes that appreciate its acidity and minerality. Think ceviche, sushi and sashimi, marinated shrimp, steamed mussels, grilled or poached white fish, and lightly spiced Asian cuisine such as Vietnamese salads or Thai dishes with lime and ginger. It also pairs beautifully with classic German fare like trout with herbs, schnitzel with lemon, or fresh goat’s cheese and young, mild soft cheeses. Serve well-chilled at around 8–10 °C to highlight its freshness and precision. A short decant of 15–20 minutes, or simply giving the wine some time in the glass, can help it open up aromatically, especially in its youth.
