Prüm is a beautifully poised, low-alcohol Riesling that captures the purity and finesse of this legendary site. Delicately textured yet full of energy, it balances crystalline freshness with depth and refinement, making it a classic cellar-worthy Spätlese. This bottling continues the long tradition of J.J. Prüm’s benchmark wines from Wehlener Sonnenuhr, a name revered by Riesling lovers worldwide.
Tasting Notes
In the glass, the 2021 Wehlener Sonnenuhr Spätlese is pale straw with a silvery-green hue, signaling its youth and vibrancy. The nose is initially flinty and slightly reductive, opening with time in the glass to reveal intense, pure lemon zest, cool herbal and subtle leafy notes, and a hint of crushed slate. There’s a palpable sense of precision and tension on the aroma, suggesting both concentration and finesse. On the palate, this is crystal-clear, finely etched and remarkably light on its feet, yet surprisingly mouthfilling. Bright citrus—particularly lemon and lime—drives the core, supported by a salty, slate-driven minerality and subtle phenolic grip that adds structure. The sweetness is perfectly balanced by electric acidity, giving an impression of both delicacy and depth. The finish is long, saline, and citrus-fresh, with a lingering sense of clarity and refinement. While already impressive, the wine’s phenolic structure and youthful tension indicate excellent aging potential; it will reward a decade or more of cellaring, gaining in complexity, harmony, and textural silkiness over time.
Production
Wehlener Sonnenuhr is one of the Mosel’s most celebrated steep-slope vineyards, rooted in weathered blue Devonian slate that imparts remarkable minerality, precision, and lift to the Riesling grown there. The cool Mosel climate and the vineyard’s optimal sun exposure allow for a long, slow ripening season, preserving vibrant acidity while building aromatic complexity. Grapes are typically harvested by hand in multiple passes (selective picking) to ensure perfect ripeness and to capture the nuanced expression of the site. In classic J.J. Prüm fashion, the must is gently pressed and fermented slowly in stainless steel and/or traditional large old oak casks with a focus on low intervention, cool fermentation, and extended time on fine lees. This careful, patient approach preserves the wine’s flinty freshness, precision of fruit, and subtle residual sweetness that defines top-tier Mosel Spätlese.
Food & Serving
This Spätlese is a superb partner for refined cuisine that benefits from its brightness and gentle sweetness. Think delicately spiced Asian dishes (sushi, sashimi, Thai salads, light curries), freshwater fish, ceviche, lobster with citrus butter, or classic German pairings such as pork with apple, schnitzel, or mild soft cheeses. It also works beautifully with lightly spiced vegetable dishes and aromatic herbs. Serve well-chilled at about 8–10°C (46–50°F) to emphasize its precision and freshness; as it warms slightly, more complexity will emerge. Decanting is not strictly necessary, but a brief splash in a carafe or simply opening the bottle 30–45 minutes before serving will help any initial reduction blow off and allow the wine’s aromatics to fully blossom.
