In the glass, the 2021 Graacher Himmelreich Kabinett is pale lemon with shimmering green reflections, hinting at its youth and vibrancy. The nose is clear, bright and deep, offering flinty minerality and delicate smoke over ripe citrus, white peach and green apple, all wrapped in that classic Mosel slate perfume. There’s an aromatic concentration here that feels both refined and inviting. On the palate, the wine is lush yet supremely fresh, with a juicy, mouth‑watering acidity that keeps the natural sweetness perfectly in check. Production
The grapes for this wine come from the steep, slate‑rich slopes of Graacher Himmelreich in the Middle Mosel, a site prized for its cool exposition and deep Devonian slate soils that lend Riesling its hallmark minerality and finesse. Vineyard work is meticulous, with low yields and hand harvesting on the precipitous terraces to ensure only perfectly ripe, healthy bunches are selected. In true J.J. Prüm fashion, fermentation takes place slowly at cool temperatures in traditional large old oak or stainless‑steel, allowing native yeasts and time to shape the wine. Residual sugar is carefully balanced by naturally high acidity, and the wine rests on its fine lees before bottling under natural cork, preserving purity, precision and long life.

This Kabinett is wonderfully versatile at the table. Its bright acidity and gentle sweetness make it an ideal match for spicy Asian dishes (Thai or Vietnamese cuisine), sushi, ceviche, light curries, or aromatic dishes with ginger and lemongrass.
