Tasting Notes
In the glass, Where Dreams 2022 shows a luminous straw-yellow color with golden highlights, signaling both concentration and freshness. The nose is layered and inviting, opening with ripe citrus and orchard fruits—lemon curd, pear and golden apple—followed by nuances of pineapple, white flowers, vanilla pod, toasted hazelnut and a subtle buttery note. Delicate hints of brioche and wet stone add complexity as it unfurls in the glass. On the palate, this is a generous, textural Chardonnay, yet impeccably balanced. Silky and full-bodied, it delivers flavors of ripe peach, baked apple and lemon cream, interwoven with spicy oak, roasted nuts and a persistent saline-mineral streak that keeps everything taut and precise. The acidity is vibrant but well integrated, giving the wine both energy and length, while the finish is long, creamy and delicately spiced. Enjoyable now for its youthful opulence and purity, it has the structure and concentration to develop further complexity over 6–10 years in the cellar.
Production
Where Dreams 2022 is sourced from select Jermann vineyards in Friuli-Venezia Giulia, an area influenced by both the Adriatic Sea and the cool breezes from the Julian Alps. The soils are a mix of marl, sandstone and gravelly alluvial deposits, providing excellent drainage and encouraging low yields and concentration in the grapes. Chardonnay is harvested by hand at optimal ripeness to preserve both aromatic intensity and natural acidity. After gentle pressing, the must is fermented—predominantly in French oak barriques—at controlled temperatures, allowing for a slow, expressive fermentation. Lees contact with periodic bâtonnage enhances texture, complexity and aromatic depth, followed by maturation in oak and bottle to harmonize the fruit, oak spice and signature Friulian minerality.
Food & Serving
Jermann Where Dreams 2022 is a natural match for refined, richly flavored dishes. Think butter-poached lobster, scallops, turbot or halibut, roasted chicken with herbs, veal in cream-based sauces, or truffle-infused risottos and pasta. It also partners beautifully with aged hard cheeses and richer soft cheeses. Serve at 10–12 °C (50–54 °F) to showcase both its freshness and layered aromatics; slightly cooler for aperitif-style drinking and nearer the upper range for the table. A brief decant of 30–45 minutes is recommended for younger bottles to allow the oak and fruit to knit and the wine’s full complexity to emerge.
