Tasting Notes
In the glass, the 2020 Pinot Noir Brut Nature Prestige shows a pale, delicately copper-tinged straw hue – a visual hint at its Pinot Noir origins despite its ‘white’ designation. The mousse is fine and persistent, forming a delicate crown of bubbles. On the nose, it is complex and layered: notes of crisp apple and pear mingle with subtle red-berry tones, a touch of brioche and fine lees, and a flinty, mineral edge. Production
Grown on the slopes of the Hessische Bergstraße, this Pinot Noir (Spätburgunder) comes from cool-climate sites that combine limestone, loess and mineral-rich soils – ideal for refined, high-acid base wines. The grapes are harvested by hand at optimal ripeness for sparkling wine, focusing on freshness and aromatic clarity rather than overt ripeness. As a blanc de noirs, the juice is gently pressed off the red Pinot Noir skins with minimal contact to preserve delicacy and avoid color extraction. The base wines are vinified with great care, often involving extended lees contact before a traditional second fermentation in bottle. The Prestige 2020 is then matured on its lees for an extended period to build complexity, texture and fine mousse, and it is released as Brut Nature, with no dosage added, allowing the terroir and the grape to speak with maximum transparency.

This Brut Nature blanc de noirs is a superb partner for refined, savory dishes where freshness and texture matter. Think oysters, scallops, sushi and sashimi, or delicately prepared white fish with citrus or beurre blanc. It also shines with charcuterie, lightly smoked salmon, poultry terrines, and soft, bloomy-rind cheeses such as Brie or Camembert. Serve well-chilled at around 8–10 °C; if the bottle is very cold from the fridge, give it a few minutes in the glass to open up.
