In classic Geltz-Zilliken fashion, fermentation takes place slowly—often with native yeasts—in large, traditional German oak foudres in the estate’s cool, deep slate cellars, followed by extended lees aging to build texture and harmony without sacrificing the crystalline purity for which Saar Riesling is renowned.
