Production
Casa delle Colonne Zero is sourced from select vineyards in Franciacorta, where Chardonnay and Pinot Nero grow on gently rolling hills composed of glacial moraines, rich in stones and minerals that lend precision and structure to the wines. Grapes are hand-harvested at optimal ripeness to preserve acidity and aromatic purity, then gently pressed to extract only the finest must. Primary fermentation takes place in temperature-controlled conditions, with part of the base wines often matured on fine lees to build texture and complexity. After blending, the wine undergoes a second fermentation in bottle following the traditional method, then rests for an extended period on its lees as a Riserva, allowing depth and refinement to develop. No dosage is added at disgorgement, resulting in a zero-dosage Franciacorta that reflects its vintage, terroir, and natural maturation without correction or enrichment.
