Tasting Notes
In the glass, 3B Rosè shows a delicate, pale salmon-pink color with a lively bead of fine, persistent bubbles. The nose is fresh and inviting, with notes of wild strawberry, red currant and pomegranate, layered with hints of pink grapefruit, rose petals and a subtle saline, mineral edge. On the palate, this is bone-dry, brisk and linear, with a beautifully taut structure. Crunchy red berry fruit, citrus zest and a light cranberry-like tang are framed by vibrant acidity and a chalky, slightly salty finish that speaks clearly of its Atlantic proximity. The mousse is refined rather than aggressive, giving the wine a sense of lift and precision. As a non-vintage Brut Nature, it is best enjoyed in its youth for maximum freshness and energy, but it will hold nicely for a couple of years, gaining a touch of creaminess and complexity with time on cork.
Production
3B Rosè Brut Nature is sourced from vineyards in the Aveiro coastal area, influenced by the nearby Atlantic Ocean, where cool breezes and a temperate climate help preserve acidity and finesse in the grapes. The cuvée is typically based on the native Baga (for red fruit, structure and character) and Bical (for freshness and elegance), grown on predominantly limestone and clay-limestone soils that contribute to the wine’s mineral backbone. Grapes are harvested by hand to ensure careful selection, then gently pressed to extract just enough color for a delicate rosé hue. Primary fermentation takes place in stainless steel to protect the purity of fruit, followed by a traditional second fermentation in bottle. The wine rests on its lees to develop texture and complexity, and, as a Brut Nature, it is disgorged without dosage, resulting in a very dry, transparent style that reflects both place and grape.
Food & Serving
This is an exceptionally versatile sparkling rosé that shines with a wide range of foods. Pair it with seafood such as oysters, shrimp, ceviche, or simply grilled fish to echo its saline, mineral notes, or try it alongside sushi and sashimi for a bright, cleansing counterpoint. It also works beautifully with charcuterie, fresh goat cheese, tapas, and lighter poultry or vegetable dishes. Serve well-chilled, ideally around 6–8°C (43–46°F), in a white wine or tulip-shaped sparkling glass to allow the aromas to open. Decanting is not necessary, but opening the bottle a few minutes before serving and giving it a gentle swirl in the glass will help the wine fully express its delicate aromatics.
