Tasting Notes
In the glass, the wine shows a pale, shimmering lemon hue with green reflections, hinting at its youth and freshness. The nose is precise and stony, opening with ripe lemon and lime zest, a touch of green apple and white peach, layered over cool, gravelly minerality and a subtle herbal lift. On the palate, it is lush yet finely etched, with a graceful, almost weightless texture. Juicy citrus and stone-fruit flavours are wrapped around a core of salty, slate-tinged minerality, giving the wine real tension and grip. The sweetness sits delicately in the background, perfectly balanced by racing acidity, making it feel more like a feinherb Spätlese than a classic Kabinett. The finish is long, mouthwatering and vividly refreshing. While already charming and highly digestible now, this 2021 has the structure and acidity to evolve beautifully over 8–12 years, developing more complexity and creamy, honeyed nuances with time.
Production
Sourced from the historic Krötenpfuhl vineyard near Bad Kreuznach in the Nahe, this Riesling grows on light, gravelly and sandy soils that promote excellent drainage and a particularly cool, airy microclimate. These conditions yield grapes with bright acidity, moderate ripeness and a distinctly stony character. Harvest is carried out by hand, parcel by parcel, to ensure only optimally ripe, healthy berries are selected. In the cellar, Dönnhoff works with a gentle, minimalist philosophy: slow, cool fermentation—often in stainless steel and large old German oak casks—preserves purity of fruit and fine Riesling aromatics, while a small amount of natural residual sugar is retained to balance the vivid acidity. The wine is then rested on its lees to gain texture and finesse before bottling under screwcap to lock in freshness.
Food & Serving
This off-dry, finely mineral Riesling is a versatile food partner, especially well suited to dishes with gentle spice or subtle sweetness. Try it with Thai or Vietnamese cuisine, sushi and sashimi, ceviche, or lightly spiced prawn and scallop dishes. It also pairs beautifully with fresh goat’s cheese, soft cow’s milk cheeses, summer salads, white asparagus, and delicate poultry or pork dishes with citrus-based sauces. Serve well-chilled at 8–10°C. Decanting is not essential, but opening the bottle 15–20 minutes before serving or giving it a quick splash into a carafe can help the aromatics open up, especially in its youth.
