In the glass, the 2022 Chardonnay Ouillé shows a pale lemon to light gold hue with crystalline clarity and a slight green rim, signaling its youthful energy. Production
Domaine Villet farms its Chardonnay organically on limestone-rich marl soils around Arbois in the heart of the Jura, a region prized for its cool climate and distinctive geology. The vineyards are tended by hand, with low yields and a focus on biodiversity to preserve the health of the vines and the expressiveness of the terroir. Grapes are harvested manually at optimal ripeness, then gently pressed and allowed to ferment spontaneously with native yeasts. The wine is aged in neutral and lightly-used oak barrels in an ouillé style—meaning the barrels are regularly topped up to prevent oxidation—preserving the clarity of fruit and minerality. Minimal intervention and modest sulfur at bottling allow the character of the site and vintage to shine through.
Food & Serving
This Jura Chardonnay is an excellent partner for subtly flavoured, delicately prepared dishes. Try it with freshwater fish (trout, pike-perch), grilled or poached white fish, shellfish, scallops, sushi and sashimi, or creamy goat and soft cow’s milk cheeses—especially Comté, which is a classic local match. It also works beautifully with roast chicken, poultry terrines and vegetable dishes featuring mushrooms or root vegetables. Serve at 10–12°C, slightly cooler than room temperature but not ice-cold, to let the aromatics fully express themselves.
