In the glass, the 2019 Les Mazures is a pale, luminous straw-gold with green highlights, reflecting its freshness and youthful energy. The nose opens with pure citrus—lemon zest and grapefruit—layered over notes of crisp orchard fruit, white peach and green apple, followed by nuances of fresh-baked bread, almond, chalk dust and a subtle floral lift. There’s a gentle creaminess to the aroma that never feels heavy, just refined. Domaine Paul Pillot farms these vineyards with great care, favoring low yields, careful canopy management and hand harvesting at optimal ripeness to preserve freshness in a naturally ripe vintage like 2019. In the cellar, the grapes are gently pressed and the juice is fermented with indigenous yeasts in French oak barrels, with a modest proportion of new oak to frame the fruit rather than dominate it. Aging on fine lees adds texture and complexity while malolactic fermentation and judicious bâtonnage are handled with restraint, resulting in a wine that showcases clarity, finesse and the mineral signature of its terroir.
