Tasting Notes
In the glass, this wine shows a luminous pale straw colour with greenish highlights, suggesting freshness and tension. The nose unfolds gradually: at first, restrained and mineral, then opening into ripe yellow fruits such as mirabelle plum and golden apple, joined by nuances of fully ripe gooseberry, citrus zest, acacia blossom, beeswax and a subtle smoky, flinty note typical of Pouilly-Fumé. On the palate, the wine is precise and linear yet textural, with a fine, chalky backbone running through the mid-palate. Ripe stone and orchard fruits are layered with hints of lemon curd, grapefruit pith, fennel and a delicate herbal edge. The extended aging on lees in concrete has added depth and creaminess without masking the vibrant acidity or the saline, limestone-driven finish. Already compelling, it has the structure and balance to evolve gracefully for 6–8 years from vintage, gaining in complexity, honeyed notes and additional savoury minerality over time.
Production
The fruit for Aubaine comes from selected parcels within the lieux-dit “Les Champs de Cris” in Pouilly-Fumé, where the soils are dominated by Caillottes – small, fragmented pieces of hard Portland limestone that offer excellent drainage and naturally limit yields. Vines reach up to 50 years of age, concentrating flavour and minerality, and are farmed organically with great attention to soil health and biodiversity. Yields are deliberately kept low at around 35 hl/ha to intensify character. Harvest is carried out by hand, allowing for careful selection of perfectly ripe, healthy Sauvignon Blanc grapes. In the cellar, fermentation proceeds with a gentle, low-intervention philosophy, followed by an extended 18 months of aging on the fine lees in neutral concrete tanks. This long lees contact builds texture and complexity while preserving the purity, precision and tension of the terroir, without influence from oak.
Food & Serving
This Pouilly-Fumé is a natural partner for fine seafood: think oysters, scallops, poached turbot, grilled sea bass or sashimi. It also shines with goat’s cheese (especially Loire classics like Crottin de Chavignol), shellfish pastas, citrus-marinated chicken, and vegetable dishes featuring fennel, asparagus or leek. Serve well-chilled but not icy, ideally at 9–11°C (48–52°F), to allow the aromatics and texture to fully emerge. Because the wine is initially quite reserved, decanting for 30–60 minutes, or giving it generous aeration in the glass, is strongly recommended to reveal its full aromatic spectrum and layered minerality.
