Tasting Notes
In the glass, La Sagesse Bio 2022 shows a luminous, medium to deep ruby hue with a slight translucence that hints at finesse rather than heaviness. The nose is vibrant and pure, opening with red cherry, wild strawberry and ripe raspberry, followed by notes of dried herbs, garrigue, crushed rose petals and a touch of sweet spice. Subtle hints of licorice, pepper and warm stones underline its Southern Rhône origins without ever becoming rustic or heady. On the palate, the wine is silky and supple, with a beautiful core of sweet red fruit balanced by fresh acidity and fine, powdery tannins. The old vines add depth and concentration, giving layers of juicy cherry, red plum and wild berries, framed by savory nuances of thyme, fennel and a gentle mineral line. There is an effortless drinkability despite its seriousness, with a long, graceful finish marked by spice and aromatic herbs. Enjoyable now for its energy and purity, it also has the structure to evolve gracefully over the next 6–10 years, gaining complexity and a more savory, tertiary character with time in bottle.
Production
La Sagesse comes from three distinct parcels in Montbrison-sur-Lez, in the northeastern sector of the Southern Rhône, about 30 km southeast of Montélimar. Two parcels lie on a limestone plateau at around 300 meters altitude, lending tension, freshness and mineral precision, while the third parcel sits on a sandier, south-facing slope that brings suppleness and aromatic lift. The Grenache vines are between 50 and 70 years old, farmed according to certified biodynamic principles, with very low yields of around 20 hl/ha. Harvest is carried out by hand with strict selection in the vineyard. In the cellar, the grapes undergo a gentle, approximately 15-day maceration in raw concrete tanks, with partial destemming and indigenous yeasts for spontaneous fermentation. After malolactic fermentation, the wine is only minimally sulfured, with no other oenological additions or manipulations. It is then aged in used barriques, which respect the fruit and terroir without imparting overt oak character, resulting in a wine that is both naturally made and impeccably clean and precise.
Food & Serving
La Sagesse Bio 2022 is a versatile food wine that pairs beautifully with Mediterranean and rustic French cuisine. Think herb-roasted chicken, grilled lamb chops with rosemary, duck breast with cherries, or vegetable dishes such as ratatouille, roasted aubergine, stuffed peppers and wild mushroom tarts. It also works well with charcuterie, aged mountain cheeses and dishes featuring Provençal herbs. Serve at 15–17 °C to highlight its freshness and aromatic complexity. Decanting for 30–60 minutes is recommended in its youth to allow the wine to open up fully, soften the tannins and reveal the full spectrum of fruit, spice and garrigue notes.
