A portion of the Pinot Noir is vinified as red wine, carefully macerated to achieve color, structure, and aromatic depth without heaviness. After the first fermentation in stainless steel, the final blend is assembled and undergoes its second fermentation in bottle, followed by extended lees aging in the cool cellars of Épernay. This long maturation—often around a decade or more before release—builds the wine’s creamy texture, complexity, and signature Dom Pérignon finesse.
